Pappy’s “On the Trail” Cracklin Cornbread Recipe
1. In a large bowl Combine 1 cup of yellow cornmeal, 1 cup of all-purpose flour, 1 1/3 cup butter milk, 2 eggs, 2 teaspoons of baking powder, 1 teaspoon salt, ¼ teaspoon baking soda, ¼ cup of melted butter or bacon drippings.
2. Stir until ingredients are well blended; make a well in center of mixture and add 2 cup of Pappy’s Pork Cracklin crumbled into smaller pieces. Stir together until batter is completely mixed.
3. Next, pour batter into a heated 9-inch cast-iron skillet coated with butter or vegetable cooking spray. Bake at 425° for 25 to 30 minutes or until golden brown. Let cool and Enjoy the Best Corn Breat Ever!
